Gluten-Free Ginerger Snaps


I adapted this recipe from a cookie recipe that Mary gave me!


2 cups Oat Flour (or any blenf of GF flour)

1 tsp salt

1 tsp baking soda

1/2 tsp Xantham Gum

2 tsp grated fresh ginger

1 tsp dried ginger

1 tsp cinnamon

1/2 tsp cloves

1/2 tsp black pepper

3/4 butter or shortening

1 egg

1/2 cup of sugar

1/2 cup Molasses


Preheat oven to 35o degrees.


Mix the spices and dry ingredients and set aside. In a mixer, blend the butter, sugar, egg, and molasses. Slowly mix in the flour mixture.


Roll into balls and toss in granulated sugar.


Bake fro 10-11 minutes at 350 degrees!
