Red Currant Muffins

These are one of my husband's favorite muffins! We picked them at his parents' house the other day! They are very tart but in a sweet, moist muffin they taste delicious!










Ingredients

1 3/4 cup Flour

1/3 cup Sugar

2 teaspoons Baking Powder

1/4 teaspoon Salt

1 Egg

1/2-3/4 cup Milk

3/4 cup plain or Greek Yogurt

1/4 cup Oil

1 1/2 cups Red Currant


Directions

Heat oven to 400 degrees.

Grease 12 muffin tins.

Whisk egg, milk, yogurt, and oil.


Add in flour, sugar, salt, baking powder. Mix to combine.

Add in Red Currants. Gently mix.


Pour into muffin cups.


Bake at 400 degrees for 18-20 mins!
